What is plate cost?
Everything it takes to make and serve one item: ingredients, sauces, oil and packaging. It’s the starting point for pricing your menu.
How the price is suggested
Price = plate cost ÷ target food cost %. At a $2.70 plate cost and a 30% target, that’s $9.00. We round up to the next price ending in .49 or .99.
Keep it current
Supplier prices change every week. Recost your top sellers at least monthly, or every time a big ingredient moves.
